Southwest Blue Corn Pancake Mix

This pancake mix includes stone-milled Blue Corn. We source the corn from New Mexico. The corn is certified organic and resembles a flinty type dark blue corn. This color provides a boost of anthocyanins, anti-oxidants that support your cells and protect them from damage. We use the whole kernel in this grind so you are also getting the benefit of a 100% whole grain product. This pancake mix is combined with our Pueblo White whole wheat, our own Red Fife wheat flakes, and raw millet. When cooked, the pancakes have a velvety lavender color.
